Macaroni salad without mayo and a bit of a kick. Ingredients:
8 ounces elbow macaroni |
1 large carrot, diced |
1 stalk celery, diced |
1 tablespoon italian seasoning |
1 tablespoon thyme |
1 tablespoon basil |
1 tablespoon chili powder |
1 tablespoon crushed red pepper flakes |
fresh ground black pepper, 10 turns of pepper mill |
1 pinch salt |
2 tablespoons vinegar, red |
1/4-1/2 cup extra virgin olive oil |
Directions:
1. Cook pasta until al dente. 2. Mix all ingredients together. Use enough EVOO to coat. 3. Chill. |
