This spicy mac and cheese is my own recipe I came up with after becoming a vegetarian and deciding to spice things up a little. It's extra cheesy with a little spice. My mom, sister, boyfriend and nephews absolutely love this recipe. It's even good for the young ones as long as you use original rotel instead of hot. Ingredients:
4 ounces whole wheat spiral pasta |
8 ounces velveeta cheese |
5 ounces rotel (hot or original) |
Directions:
1. boil whole wheat spiral pasta until tender. drain water. 2. add 8 oz of velveeta and can of rotel tomatoes. 3. stir everything together until cheese is melted. 4. let cool down for about a minute or two and serve. |
