My husband fell in love with the spicy lentil soup at shalimar Indian restaurant and being the wife I am that aims to please I set ot to recreate it at home. he said in the end he liked mine better. Ingredients:
2 large onions, chopped |
1/4 cup olive oil |
4 garlic cloves, minced |
3 celery ribs, chopped |
3 carrots, finely chopped |
1 teaspoon curry powder |
1 teaspoon cumin |
1 teaspoon sea salt |
1 teaspoon pepper |
1/2 teaspoon dried thyme |
5 cups vegetable stock |
2 bay leaves |
2 teaspoons brown sugar |
2 tablespoons ketchup |
3 cups diced tomatoes |
2 cups lentils, rinsed |
5 cups water |
1/2 cup dry sherry |
Directions:
1. saute onions in olive oil until soft. 2. add garlic, celery and carrots and cook 15 minutes. 3. add seasonings and saute briefly. 4. add broth, bay leaves, sugar, ketchup, tomatoes, water, lentils and sherry. 5. simmer two hours. 6. remove bay leaves before serving. |
