Spicy Lentil and Tomato Soup |

I was given this recipe by a friend in 2001 and use it often as it is so quick and easy to prepare and cook, and most people have the ingredients in the cupboards so no need to nip out to the shops if stuck for a starter or just wanting a nice hardy lunch. Ingredients:
6 ounces red lentils |
1 onion |
1 garlic clove |
1/2 finely chopped chili pepper |
1 (400 g) can chopped tomatoes |
10 fluid ounces milk |
1 pint vegetable stock |
1 tablespoon vegetable oil |
1 tablespoon worcestershire sauce |
salt and pepper |
Directions:
1. roughley chop the onion, chilli and garlic,. 2. heat oil in a large pan and fry onion, chilli and garlic until golden brown,. 3. add remainding ingredients and simmer for 45 minutes,stirring occationally. |
