Spicy lentil soup with a twist, good to get in before spring arrives as it's a warmer :D Ingredients:
2 cups of green (preferrable) lentils soaked overnight and cooked until tender |
1 large leek sliced finely |
large knob of butter |
3 cloves of garlic, chopped |
1/1.2 ltr of good chicken stock |
some cream or yogurt (few tablespoons) |
1 tsp cayenne pepper |
handful of fresh chopped parsley |
salt and pepper |
Directions:
1. sweat the leek and garlic with the butter and cayenne until soft 2. Add the cooked lentils and stock on a low heat until boiling 3. remove half the mixture and blend and add back into the pot 4. salt and pepper to taste and serve with chopped parsley and a little swirl of cream or yogurt and some bread |
