Spicy Lemon Shirmp Lollipops |

I found this on the internet and thought I would give it a go . I used it as an appetizer before a dinner party. Everyone loved it. Ingredients:
32 large or extra large shrimp, cooked, peeled and deveined |
1 cup vegetable oil |
1 cup red wine vinegar |
2 tablespoons lemon zest |
1/4 cup fresh lemon juice |
3 tablespoons granulated sugar |
2 tablespoons hot pepper sauce, or to taste |
2 tablespoons dijon mustard |
2 cloves garlic, minced |
1/4 teaspoon salt |
16 (6 inch) bamboo skewers |
Directions:
1. Whisk together oil, vinegar, lemon zest, lemon juice, sugar, hot pepper sauce, Dijon mustard, garlic and salt. 2. Pour into large resealable bag. 3. Add shrimp and chill overnight, turning bag several times. 4. Drain and remove shrimp from marinade. 5. Skewer two shrimp onto each skewer. 6. Arrange on a leaf lettuce lined platter. 7. Serve with fresh lemon wedges if desired. |
