A great family chicken dish. Time does not include marinating. Ingredients:
1 lb boneless skinless chicken breast |
1 lemon, zest and juice |
2 tablespoons light soy sauce |
1 teaspoon ground coriander |
2/3 cup tomato sauce |
1 red chili pepper, deseeded and finely chopped |
1 teaspoon lemongrass, finely chopped |
2 garlic cloves, crushed |
salt & freshly ground black pepper |
1 tablespoon cilantro, chopped |
Directions:
1. Using a sharp knife, cut the chicken breast into dice and place in a shallow dish. Season with salt and pepper. 2. Combine the remaining ingredients, except the cilantro, and pour over the chicken. 3. Leave to marinate for at least an hour, mixing occasionally. 4. Strain away the marinade from the chicken and reserve. 5. Preheat a non-stick wok or frying pan and dry-fry the chicken over a high heat for 5-6 minutes, turning it to seal all sides. 6. Add the reserved marinade and continue to cook for a further 10 minutes to allow the sauce to simmer gently and thicken. 7. Stir in the fresh cilantro and serve. |
