Spicy Leek Soup With Blue Cheese |

A spiced version of leek & potato soup for a change. Serve with crusty bread. Ingredients:
1 lb potato, peeled and cubed |
1 1/2 leeks, shredded |
1/2 teaspoon coriander seed |
1/2 teaspoon curry powder |
4 cups vegetable stock |
2/3 cup milk |
5 ounces blue cheese, crumbled |
Directions:
1. Saute the peeled and cubed potatoand shredded leeks. 2. Add the coriander seeds and the curry powder, cook for 2 minutes. 3. Add the vegetable stock, bring to the boil and simmer for 15-20 minutes. 4. Puree, season and add the milk and the crumbled blue cheese. 5. Serve. |
