Spicy Italian Sausage Penne |

This thick savory ragu with italian sausage in penne pasta will be sure to satisfy that pasta craving. Be sure to cook the sauce down to a thick reduced consistency. Add more chili flakes to make as spicy as you like! Ingredients:
2 cups penne pasta |
2 italian sausages |
1 cup tomato sauce |
1 small onion, sliced |
3 garlic cloves, minced |
3 tablespoons olive oil |
3/4 cup sliced mushrooms |
2 roma tomatoes, chopped |
2 tablespoons fresh basil, chopped |
3 tablespoons fresh parsley, chopped |
1 teaspoon chili flakes |
2 teaspoons anchovy paste |
salt |
pepper |
parmesan cheese, grated |
Directions:
1. In frying pan, add 1/2 tbsp oil and brown sausages, approximately 5 minutes. Add 1/4 cup of water and cover. Let cook for approximately 8 minutes, remove from pan and set aside. In same pan, add remaining oil and onions and sauté for 3 minutes. Add mushrooms and a pinch of salt and sauté for 3 minutes. Add garlic, anchovy paste and chili flakes and cook for 5 minutes. Add tomatoes and sauté for 5 minutes more. Cut the sausages into diagonal slices and add them to the pan along with the tomato sauce and cook till sauce is thickened, approximately 8 minutes on med/high heat. Remove from heat and add the basil and parsley. Drain pasta and add to the sauce. Serve topped with grated parmesan. |
