I don't know how conventional this hummus recipe is, but it sure is delicious! If you're sick of bland, insipid, and totally uninspiring hummus, this should make you and your taste buds happy. It works as a vegetable dip, as a spread, or in sandwiches. Ingredients:
2 cups chickpeas, drained and rinsed |
2 tablespoons smooth cashew butter (almond butter works too) |
1 large garlic clove |
1/3 cup olive oil |
1/4 cup lemon juice |
1 teaspoon black pepper |
1 teaspoon coriander |
1 teaspoon cumin |
1 teaspoon fennel seed |
1/4 teaspoon paprika |
1/4 teaspoon cayenne pepper |
3 tablespoons water |
Directions:
1. Put all the ingredients in the food processor and blend until smooth. Refrigerate for up to 4 days. |
