Do not use low-salt corn or black beans; you need the salt. Ingredients:
1 lb lean ground beef or 1 lb ground turkey |
2 (10 1/2 ounce) cans rotel diced tomatoes (or other brand of tomatoes and chiles) |
1 (15 ounce) can whole kernel corn, undrained |
1 (15 ounce) can black beans, drained and rinsed |
4 cups chicken broth |
shredded cheddar cheese |
Directions:
1. Brown meat in a skillet and drain any fat. Combine meat with tomatoes, corn and beans in 6 qt slow cooker. Add chicken broth. Cover and cook on low 6-8 hours. Serve with shredded cheddar cheese. |
