Spicy Ham and Cheese Casserole |

My own personal recipe for ham and cheese casserole, a favorite made lighter as we search for a better way of eating without sacrificing taste! Add mushrooms or green beans for a change! Ingredients:
4 potatoes |
16 ounces ham |
1/2 onion |
1 (10 1/2 ounce) can cream of mushroom soup |
4 ounces low-fat monterey jack pepper cheese |
Directions:
1. Line a 2 quart casserole dish with foil; spray with pam. 2. Preheat oven to 350. 3. Dice onion, ham, potatoes, cheese. 4. Place in the foil lined casserole in this order: onion, potato, ham, cheese, soup (not diluted). 5. Repeat layers till done. 6. Sprinkle with salt and pepper. 7. Cover tightly and bake until potato is tender, 45-60 minutes. |
