I have made several different guacamole over the years and this one is my favorite because it has a spicy kick. Ingredients:
3 medium avocados, ripe |
12 ounces rotel tomatoes, drained |
1 small red onion, chopped |
1 medium lemon, juice of and zest |
1 -2 tablespoon fresh cilantro, chopped |
1 medium fresh jalapeno, minced |
salt and pepper |
Directions:
1. Core and smash avacodo with a fork in a medium bowl. 2. Add salt, pepper, and lemon juice and blend well. 3. Add onion, cilantro and jalapeno. 4. Chill at least 30 minutes. 5. Enjoy with your favorite tortilla chips or mexican dish! |
