Spicy Greens With Sun-Dried Tomatoes |

From the Healthy Heart Cookbook by AMA One of my favorite greens recipies that I make for any big gathering as a side dish everyone loves. Ingredients:
1 tablespoon olive oil |
1/2 red onion |
1/2 cup sun-dried tomato, chopped, plumped in warm water |
2 tablespoons balsamic vinegar or 2 tablespoons red wine vinegar |
1 garlic clove, chopped |
1 lb kale, trimmed and chopped |
1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. In a large sauce pan or Dutch oven, heat olive oil over medium heat. Add the onion and saute until soft, about 4 minutes. 2. Add sun-dried tomatoes, vinegar, and garlic and mix well. 3. Add the greens, one third at a time, pressing them down until they begin to wilt. 4. Season with salt and pepper. 5. Reduce heat to medium low and cook, uncovered, until greens are tender, about 8 minutes. 6. Serve hot. |
