Definitely use fresh green beans for this dish. Ingredients:
1 tablespoon extra-virgin olive oil |
1/2 shallot, minced |
1/2 jalapeno pepper, seeded and minced, or more, depending on your taste for spice |
8 ounces fresh green beans, cut into 2 inch pieces |
1/2 teaspoon salt |
1 tablespoon lemon juice |
Directions:
1. Heat olive oil in a large skillet over medium-high heat 2. Add the shallot and jalapeno and cook until tender, about 5 minutes 3. Add green beans and season with salt 4. Cook and stir until tender crisp, but still bright green, 4-5 minutes 5. Reduce heat and stir in lemon juice to loosen any bits from the bottom of the pan 6. A sprinkling of sesame seeds on top is nice too 7. Serve immediately |
