Icelandic Gingersnap Cookies from . I haven't made these yet and there is no yield in the recipe so I completely guessed. Cook time does not include chill time.
Ingredients:
500 g flour
500 g brown sugar
250 g butter
2 eggs
5 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons ginger
1 teaspoon cinnamon
1/2 teaspoon powdered clove
1/2 teaspoon ground pepper
1/4 teaspoon paprika
Directions:
1. Mix together the dry ingredients.
2. Add soft butter and eggs and knead until smooth.
3. Cool in the refrigerator overnight.
4. Roll out into sausage shapes of even thickness, pinch or cut off small portions and make little balls out of the dough.
5. Put on a cookie sheet covered with baking paper and press your palm on top of each ball to flatten slightly.
6. Bake at 200°C until browned.
