This is unlike anything you ever tasted. Its great next to seafood! And the garlic filling is also a great marinade for talapia and other light fish, before breading & frying. This is not for everyone. Definitely not a first or second date side dish either. Ingredients:
8 beefsteak tomatoes |
1 head of garlic peeled and finely minced |
2 tablespoon cumin |
1 tsp salt |
1 tsp pepper |
1/2 tsp cayenne pepper powder |
Directions:
1. Slice tomatoes 2 or 3 time horizontally not going all the way. Just as far through so its sliced but not detached. 2. in a small mixing bowl, combine garlic, cumin, salt, pepper & cayenne. 3. Layer half to a full tsp of garlic spice in between each slice of the tomatoes. 4. One of these tomatoes next to some seafood will definitely top off the meal. |
