Spicy Gammon and Bean Hot Pot |

Ingredients:
1 tablespoon extra virgin olive oil |
12 ounces ham steak, lean gammon, diced |
1 cup leeks, sliced |
1 cup carrots, diced |
14 ounce of chopped tomatoes |
14 ounce of beans, mixed in chili sauce |
5 ounces apple juice |
1 tablespoon mustard, wholegrain |
1 teaspoon black pepper |
Directions:
1. SPRAY a large saucepan with low fat cooking spray (or olive oil) and cook the gammon over a high heat for 2-3 minutes. 2. ADD the remaining ingredients and bring to the boil. 3. REDUCE the heat, cover and simmer for 20 - 25 minutes, until the leeks and carrots are cooked. 4. SERVE hot. |
