Spicy Fritters -soup Side Dish |

This is great as a acompaniment to soups, or as finger food, or in lunch boxes. It is also a sneaky way to hide cauliflower from the offspring!!! Ingredients:
500g cauliflower- in florets |
1 cup self raising flour |
1/3 cup coriander leaves- chopped |
1/2 cup parmesan or any hard cheese |
1-2 eggs, depending on size |
spray oil for frying |
Directions:
1. Steam/boil cauli til soft. Drain and roughly chop. Leave to cool. 2. In large bowl combine all other ingredients, then add cooled cauliflower. 3. Season and add water if necessary. 4. Drop dollops of the batter into frypan and leave 2-3 mins each side. 5. Serve warm with soup, or cold with mezethes/appetiser plate. 6. Great for lunchboxes! |
