Spicy Fresh Chicken Salad

This is a delicious, simple and healthy chicken salad with a spicy kick. I like to eat it over sliced tomatoes. I always prepare it with gluten-free ingredients. You can use any prepareation for the chicken breast, I often use leftovers. I am estimating the spices, I always just mix it to taste.
Ingredients:
1 lb chicken breast, poached
2 green peppers, chopped into small pieces
4 tablespoons light mayonnaise
6 red chili peppers
2 tablespoons curry powder
1 tablespoon chili powder
2 teaspoons ginger, grated
Directions:
1. Shred the chicken breast and place in a mixing bowl. Add the chopped green peppers. You can also add chopped onions, celery, grapes, walnuts or anything else you happen to have on hand.
2. In a seperate bowl, gently crush the chili peppers (but not to much because you will want to remove them later). Mix with the mayo and spices. Stir well. Remove the chili peppers.
3. Mix all ingredients together and enjoy as a sandwhich, over crackers, or sliced tomato.
