A simple fish stew with a spicy twist. Ingredients:
2 large onions, sliced |
2 tablespoons oil |
1/2 teaspoon curry powder |
2 garlic cloves, crushed |
1 small bay leaf |
3 tablespoons tomato puree |
1/2 teaspoon paprika |
salt, to taste |
1/4 teaspoon peri-peri |
1 cup boiling water |
1 kg fish, cubed |
1 tablespoon cornstarch |
Directions:
1. Lightly brown onion in oil. 2. Add curry powder, garlic, bay leaf, tomato puree, paprika, salt and peri-peri. 3. Stir through onion and cook for 1-2 minutes. 4. Add water, bring to the boil again and add fish. 5. Reduce heat and simmer for 10 minutes or until fish is cooked adding more water, if necessary. 6. Thicken sauce with cornstarch. 7. Serve with boiled new potatoes. |
