Spicy Eggs With Tortilla Strips

SPICY EGGS WITH TORTILLA STRIPS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Weldon Estate in Terrell, Texas in 1984.
Ingredients:
3 tablespoons butter
1 small red onion minced
1/2 teaspoon ground cumin
1 tablespoon all purpose flour
1/2 cup sour cream
6 eggs lightly beaten
1/2 cup diced tomatoes
1 large green anaheim pepper stemmed seeded and chopped
tortilla strips
18 corn tortillas cut into 1/4” strips
2 cups salad oil
1 teaspoon salt
Directions:
1. In frying pan melt butter over low heat.
2. Add onion and cumin and cook stirring occasionally until onion is soft.
3. Mix flour and cook stirring until bubbly then remove from heat and blend in sour cream.
4. Return to heat and cook stirring over low heat until smooth and bubbly.
5. Add cheeses and continue to cook stirring until melted then stir in eggs and cook 10 minutes.
6. Dividing equally and spoon egg mixture over tortilla strips.
7. To make tortilla fry strips in salad oil then cook 1 minute.
8. Drain on paper towels and sprinkle with salt.
