Spicy Eggplant with Beef - Limited Oil Ingredients:
2 tsp fresh ginger |
2 tsp minced garlic |
3 tbsp soy sauce |
2 tsp sugar |
2 tsp vinegar |
1/4 tsp crushed red pepper |
1 tsp cornstarch |
1 large eggplant |
1 large zucchini |
200 g ground beef |
1 tsp oil |
Directions:
1. Mix together ginger, soy sauce, vinegar, chili, and cornstarch. Set aside. Put ground beef in a pan and cook; then remove beef and pour out oil. Add a tsp of oil to the frying pan and heat until hot. Add eggplant and zucchini and fry until pulp is tender. Place eggplant and zucchini pieces between paper towels and press lightly to remove excess oil. Heat the sauce in the pan until near boiling. Add the eggplant and zucchini and ground beef. Mix together until thoroughly heated. add a little water if too dry. |
