Eggplant and tomatoes roasted to make a delicious sauce. Ingredients:
8 oz uncooked spaghetti |
2 medium eggplant |
3 whole tomato |
3 garlic cloves |
4 tbls canola oil |
1 tsp salt |
1 tsp black pepper |
1 tsp red pepper flakes |
Directions:
1. Dice the eggplant and tomato into small chunks. Toss peeled garlic into pan along with veggies. Drizzle in oil and season. Roast at 400 F for 35 minutes. Meanwhile, cook pasta in plenty of water. When veggies are roasted, puree in blender, adding about one cup of pasta water. Mix with pasta. |
