Spicy Egg And Cheese Stuffed Tomatoes |

You can serve these for breakfast, brunch, or as an appetizer. Sometimes I'll even make these as an evening snack as a treat to myself. Ingredients:
8 medium tomatoes |
2 garlic cloves, minced |
4 tbs. butter |
1 tsp. salt |
1tsp. pepper |
1 tsp. cayenne |
1 tsp. dried oregano |
1 tsp. cumin |
8 eggs |
1/2 c. jack or cheddar cheese, shredded |
8 tsp. breadcrumbs |
Directions:
1. Cut the tops off the tomatoes and core, a melon-baller is perfect for this. Scoop out all the seeds and plup. 2. Place tomatoes on a baking sheet with parchment paper or sprayed with non-stick spray. 3. Mix the spices and oregano together. 4. Rub half of the mixture on the inside of the tomatoes, reserve the rest. 5. Set the oven to 350 6. Saute the garlic in butter til soft and spoon into tomatoes. 7. Break an egg into each tomato (the fun part) sprinkle each egg with the rest of the spice mixture. 8. Loosely spoon the cheese over the tomatoes, then sprinkle the crumbs ontop. 9. Bake for 20 minutes. |
