Spicy Dijon and Mayo with Dill. Try with different types of fish (or shrimp, chicken, etc.) I used low-fat mayonnaise to make it South Beach Diet friendly. Note: for a quicker recipe nix the thyme, oregano, basil, even garlic. Note: for a better presentation, hold dill until the end and sprinkle over the top rather than mixing into sauce. Note: I've used regular jarred spices rather than fresh and they work just fine. Ingredients:
4 salmon steaks (or filets) |
1 1/2 cups mayonnaise |
1/2 cup dijon mustard |
2 teaspoons dill |
1 teaspoon thyme |
1 teaspoon oregano |
1 teaspoon basil |
1/2 teaspoon garlic powder (optional) |
salt |
pepper |
splash lemon juice |
Directions:
1. Preheat oven to 375°F. 2. Stir together mayonnaise and mustard. 3. Add spices (withhold dill and sprinkle on top later for a more professional presentation). 4. Arrange salmon on a baking sheet or pan. 5. Coat with sauce (add dill here if you've withheld it). 6. Bake for 30-40 minutes (salmon flakes when done). 7. Optional: When serving, spoon remaining sauce back over fish for a saucier version. |
