This is a different way to fix fresh cucumbers. The recipe calls for medium-sized cucumbers, but I've used cucumbers that had basically grown into small torpedoes. Ingredients:
2 med cucumbers, peeled, boated and sliced 1/4-inch thick |
2 t toasted sesame seed oil |
1 t white vinegar |
1 t sugar |
1 t soy sauce |
1/4 t tobasco sauce |
1/2 t salt |
4 oz sliced, raw mushrooms |
Directions:
1. Mix the sesame seed oil, vinegar, sugar , soy sauce, Tobasco sauce, and salt together. 2. Pour over the sliced cucumbers and mushrooms. 3. Toss lightly to coat. 4. A sliced pimiento can be add for color. 5. NOTES-My family doesn't like mushrooms. I've made this without the mushrooms and it still tastes great. |
