Spicy Creole Vegetable Medley |

A juicy, healthy vegetarian side dish. Especially tasty on a Louisiana-style buffet table alongside a good jambalaya for the meatatarians ! Ingredients:
1 green bell pepper, chopped |
1 medium yellow onion, chopped |
1 medium eggplant, peeled and chopped |
2 garlic cloves, minced |
3 tablespoons olive oil |
1 (24 ounce) can sliced tomatoes with juice |
1 (15 ounce) can corn kernels, drained |
1 tablespoon hot creole seasoning, of choice |
salt & freshly ground black pepper |
Directions:
1. Heat oil and saute' first four vegetables until soft. Add remaining ingredients and simmer until some of the juices have reduced. Let cool a bit; taste and adjust seasonings. |
