Spicy Couscous With Mushrooms |

A spicy way to serve couscous. Ingredients:
3 tablespoons butter |
1 cup couscous, plus |
3 tablespoons couscous |
1/2 teaspoon turmeric |
1/2 teaspoon coriander |
1 small cinnamon stick |
2 cups vegetable stock or 2 cups chicken stock |
1/2 lb mushroom |
1/2 teaspoon salt |
1/2 teaspoon cumin |
1 star anise |
1 bunch chives, chopped |
Directions:
1. Melt butter in a saucepan, add mushrooms, cover and cook until soft. 2. Stir in couscous, salt, turmeric, cumin, coriander, anise, cinnamon and chives. 3. Cook for 1-2 minutes. 4. Pour vegetable stock over the mixture, cover and set aside for 5 minutes until the liquid is absorbed. 5. Fluff up and serve. |
