Spicy Corn Salad With Avocado Dressing |

tasty and colourful Ingredients:
4 cups whole kernel corn (i use frozen) |
1 red bell pepper |
1 green bell pepper |
3 spring onions, sliced finely |
2 stalks celery |
1 large ripe avocado |
1/4 cup lemon juice |
1/4 cup sour cream |
1 teaspoon mexican chili powder |
fresh ground black pepper |
1 garlic clove, crushed (optional) |
Directions:
1. Cook corn in boiling water for 2 minutes. 2. Drain well and refresh in cold water. 3. Drain. 4. Cut peppers into 1 cm cubes. 5. Slice celery and spring onion thinly. 6. Mix corn, peppers, onions and celery together. 7. Peel and destone the avocado. 8. Mash with a fork until smooth. 9. Mix avocado,lemon juice, sour cream, chilli powder and (garlic if using) together. 10. Mix avocado dressing through the corn mixture or serve separately. |
