Delicious, creamy, sweet and spicy vegetable soup highlighting some of the best flavors of late summer and early fall. This is a recipe passed down from my Mom, that she got from a friend after tasting it at her house. Read more . It's a favorite of our whole family, veggies and non-veggies alike. You can easily make it vegan or vegetarian. Ingredients:
2 tablespoons olive oil |
2 cloves garlic, chopped |
1 large onion, chopped |
1/2 tsp cumin |
1/2 tsp oregano |
1/2 cup chopped and seeded green jalapeno pepper |
1 large red bell pepper |
2 t flour |
1 quart broth (chicken or veggie) |
1 large sweet potato, chopped |
2 potatoes, chopped |
1 can corn or 2 ears off cob cooked fresh |
1/2 cup cream, half and half, or plain soy milk (optional) |
salt |
pepper |
fresh cilantro leaves |
Directions:
1. Saute garlic and onion in olive oil, with cumin, oregano, and peppers. 2. Add broth, with flour. 3. Add sweet potato and potatoes. 4. Boil, then simmer for ten minutes. 5. Add corn. 6. Heat, do not boil. 7. Add cream (if desired), salt and pepper. 8. Add fresh cilantro leaves before serving. |
