I got this from a pamphlet at the WI state fair. Haven't made them yet but sound interesting... Ingredients:
1 1/2 cups sugar |
1/2 cup vegetable shortening |
2 eggs |
1 cup potato, mashed and chilled |
2 cups all-purpose flour |
2 tablespoons cocoa |
1 teaspoon cinnamon |
1 teaspoon baking powder |
1/2 teaspoon nutmeg |
Directions:
1. Preheat oven to 350 degrees. 2. Grease baking sheet and set aside. 3. Cream with electric mixer sugar and shortening until fluffly. 4. Add in eggs and potatoes and mix well. 5. In separate bowl mix flour, cocoa, cinnamon, baking powder, and nutmeg. 6. Add to creamed mixture in stages so does not fly everywhere when mixer is turned on. 7. Drop by rounded tablespoonful onto greased baking sheet. 8. Bake 10-12 minutes. 9. Cool on wire rack. |
