A spiced up version of a Cobb salad. I made this for dinner when I found myself with some leftover chicken salad that I didn't want to eat plain. Ingredients:
1 cup chicken salad (use your favorite recipe) |
2 cups lettuce |
1 tablespoon ranch dressing or 1 tablespoon blue cheese dressing |
1 tablespoon pickled jalapeno, diced |
1 teaspoon bacon bits |
2 boiled eggs, chopped |
Directions:
1. Mix together jalapeno and chicken salad. Layer ingredients in the bowl in the following order: lettuce, chicken salad, egg, bacon bits, dressing. |
