Spicy Chipolte Texas Chili |

A spicy no-bean Texas style chili with depth of flavor that gets better each day. Ingredients:
1 1/2 lbs ground beef (organic tastes best) |
2 sweet italian sausage links |
1/2 red onion, diced |
1 teaspoon garlic paste |
1 tablespoon olive oil (california preferred) |
1 (14 1/2 ounce) can diced fire-roasted tomatoes (like muir glen organic) |
1 (7 ounce) can chipotle chiles in adobo, diced (like goya) |
5 pieces roasted red peppers, diced (jarred) |
1/2 teaspoon ground coriander |
1 teaspoon ground cumin |
1/2 teaspoon ground cinnamon |
1/4 teaspoon red pepper flakes |
1/4 teaspoon cayenne pepper |
2 teaspoons garlic salt |
fresh ground black pepper |
cheddar cheese (optional) |
green onion (optional) |
sour cream (optional) |
corn chips (optional) |
Directions:
1. Remove sausages from casings and lightly fold into beef, browning all meat 3-5 min or until just cooked, drain off excess fat and set aside. Cook the onions in the oil over medium-low heat for 5-7 minutes or until translucent. Add the garlic paste and cook for 1 more minute. Then add all remaining ingredients and add meat. Bring to a boil, then reduce the heat and simmer, uncovered, for 20 minutes, stirring occasionally. |
