Spicy Chilled Tomato Soup

This is a very tasty and very refreshing soup that comes from my friend Gena. Enjoy
Ingredients:
3 pounds roma tomatoes seeded and diced
28 ounce can stewed tomatoes
29 ounce can tomato sauce
1 cucumber peeled cored and finely diced
1 teaspoon cayenne pepper
2 garlic cloves finely mashed
1 sprig fresh thyme
2 large lemons
Directions:
1. Combine tomatoes with canned stewed tomatoes in large saucepan over medium heat.
2. Cook 10 minutes stirring constantly until stewed tomatoes begin to disintegrate.
3. Add finely mashed garlic and cook an additional 2 minutes.
4. Add tomato sauce and cayenne then stir to blend and toss in thyme sprig.
5. Cook another 2 minutes and taste for seasoning then set aside to cool.
6. Cool for half an hour on counter then remove thyme sprig and process in blender.
7. Store in airtight container in refrigerator.
8. To serve add lemon juice and stir and add finely diced cucumber.
9. Garnish each bowl with diced tomato and thyme leaves.
