CHICKPEA STEW Ingredients:
1 onion, peeled and chopped |
1 tbspn olive oil |
1/2 teaspoon chilli powder |
2 cloves of garlic, peeled and pressed |
15 oz can of chickpeas |
5 oz can sweetcorn, drained |
14 oz. cann plum tomatoes |
1 tbspn fresh coriander chopped |
Directions:
1. FRY ONION IN A LITTLE OIL FO 10 MINUTES 2. ADD CHILLI AND GARLIC AND FRY FOR FURTHER MINUTE. 3. ADD CHICKPEAS WITH THEIR LIQUID, SWEETCORN AND TOMATOES 4. BRING TO BOIL 5. BREAK UP TOMATOES QITH WOODEN SPOON AND ALLOW TO SIMMER FOR 20 MINUTES UNTIL LIQUID HAS REDUCED AND FLAVOURS MINGLED 6. SPRINKE WITH CORIANDER 7. SERVE WITH PLAIN RICE. |
