Spicy Chicken Salad Bagels |

250 g cream cheese, softened |
1 jalapeno, seeded and finely chopped |
2 green onions, finely chopped |
1/2 the lime, juice of |
1/2 avocado, diced |
1/2 the lime, juice of |
1 cup diced cooked chicken |
3/4 cup canned corn kernel, drained |
1/2 cup sour cream |
1 plum tomato, seeded and diced |
1 celery, diced |
1 green onion, finely chopped |
1/4 cup chopped fresh cilantro |
5 -6 drops tabasco jalapeno sauce (to taste) |
salt and pepper |
6 bagels, toasted if desired |
1 yellow bell pepper, thinly sliced into rings |
6 boston lettuce leaves |
salt and pepper |
Directions:
1. Spicy cream cheese: In a bowl, blend all the ingredients with a fork. Season with salt. Keep refrigerated. 2. Chicken salad: In a bowl, combine the avocado and lime juice. Add the remaining ingredients. Season with salt and pepper. Keep refrigerated. 3. Assembly: Cut the bagels in half horizontally. Spread with the spicy cream cheese. Add two bell pepper slices and a lettuce leaf on one side. Top with the chicken salad. Close the sandwich. 4. Freezes well. |
