This recipe is fun to make, and the result is a spicy snack that goes great with any dipping sauce, a beer and football! Ingredients:
4 chicken breasts, sliced thin |
1/2 cup blue cheese |
2 chipotle peppers |
2 baby bella mushrooms |
1 clove garlic |
2 oz cream cheese |
1 tsp black pepper |
1 tsp salt |
1 tsp garlic powder |
1 1/2 cups flour |
veggie oil, or any oil to use for deep frying |
Directions:
1. Fill a pot, or deep fryer with about 3 of oil, and heat on medium 2. Prepare chicken breasts by butterflying them, and then without cutting through, run your knife across them in a checkerboard type pattern so that cheese spread will fill the voids 3. In a processor add blue cheese, chipotles, mushrooms, clove of garlic, cream cheese, and a touch of black pepper. 4. Pulse until it is a paste 5. With a knife, spread a thin coat of the mixture on each breast 6. Roll the breast tightly, folding the end in as you roll 7. Bundle with cooking twine 8. Combine flour, salt, pepper and garlic powder 9. Roll the breast in the flour, shaking off any loose flour before frying 10. Place gently in 350 degree oil and cook for approx 10 minutes, turning often, until golden brown. 11. Remove from oil and allow to sit on paper towel for a few minutes 12. Cut string, and slice the chicken to bite sized servings 13. Enjoy with your choice of dipping sauce |
