Spicy Chicken in Cabbage Leaves |

This recipe is from recipe+ and as we are hoping to reap some red cabbage soon I am saving this recipe here for possible use. It was also suggested you could use beef mince instead of chicken but honestly I think any lean minced/ground meat would work. This reminds me of a sum choy bow but using cabbage leaves instead of lettuce. Ingredients:
650 g chicken (minced or ground) |
1/4 cup curry paste (massaman) |
400 g vegetables (stir fry packet fresh) |
2 tablespoons coriander (chopped plus leaves to garnish) |
8 cabbage leaves (red small hard core removed and trimmed with scissors to serve) |
Directions:
1. Heat a wok or large fryingpan over high heat and add mince, cook, stirring with a wooden spoon to break up lumps for 5 minutes or until browned. 2. Add the massaman curry paste and stir fry for 1-2 minutes till fragrant. 3. Add vegetables to pan and stir fry for 2-3 minutes or until tender and remove from heat and stir in coriander. 4.
