Spicy Chicken Corn Chowder |

This is really spicy but you can control the heat with the amount of spices you use. You can add shredded cheese, avocado slices, or a dollop of sour cream, if you like. Ingredients:
1 tb butter |
1 tb olive oil |
1/4 c chopped onion |
1/4 c chopped carrots |
1 chopped red bell pepper |
3 baby red potatoes, chopped |
minced chiles |
1 lb diced chicken breasts |
2 tb flour |
3 c skim milk |
2 tsp cumin |
1/4 tsp thyme |
1/4 tsp cayenne |
1 can corn, drained |
1 can creamed corn |
Directions:
1. Melt butter and olive oil in a dutch oven. 2. Add onion, carrots, red pepper, potatoes, and chiles 3. Cook until veggies are very tender, about 20 minutes. 4. Add chicken and cook until opaque. 5. Add flour and cook 1 minute. 6. Add milk, spices, and corn. 7. Bring to a low boil and cook until thickened, about 5 minutes |
