SPICY CHEESY SKILLET SUMMER SQUASH DATED 1962 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Perez Estate in San Antonio, Texas in 1988. Another tried and true regular in my household. Ingredients:
5 cubed small summer squash |
1 large white onion diced |
2 roasted peeled green chilies |
1 tablespoon shortening |
1 cup shredded longhorn cheese |
Directions:
1. Sauté onion in shortening until soft then add squash and stir until almost tender. 2. Add chilies and simmer briefly then sprinkle on cheese and stir until melted. |
