A perfect recipe from bringing the taste of summer to the table on a chilly night. Ingredients:
1 1/2 cups water |
2 cups potatoes, peeled and diced |
2 carrots, peeled and shredded |
1 sweet onion, diced |
1/4 cup green pepper, chopped |
1 jalapeno pepper, seeded and diced |
1 clove garlic, minced |
1 tablespoon beef bouillon granules |
1/2 teaspoon salt |
1 pound lean ground beef, browned |
2 1/2 cups milk, divided |
3 tablespoons all-purpose flour |
8 ounces american cheese, cubed |
1/4 to 1 teaspoon cayenne pepper (depending on how spicy you like) |
8 ounces bacon, cooked and crumbled |
Directions:
1. In large saucepan, combine water, potatoes, carrots, onion, green pepper, jalapeno, garlic, bouillon granules and salt. 2. Bring to a boil. 3. Reduce heat and simmer 15 to 20 minutes or until potatoes are tender. 4. Add ground beef and 2 cups milk. 5. Whisk together flour and remaining 1/2 cup milk. Add to soup. 6. Cook until mixture thickens. 7. Add cheese, stirring until cheese is melted. 8. Add cayenne to taste. 9. Add bacon and heat through. |
