An easy cheese appetizer. Baked, they come out looking like a cookie. Some of the cayenne can be replaced with paprika, if less heat is desired. Ingredients:
1 1/2 sticks butter, softened |
1 1/2 cups cheddar cheese, grated |
1 cup flour |
1 cup crispy rice cereal |
1t hot sauce |
1t worcestershire sauce |
1t cayenne |
1t dry parsley flakes, or 2t fresh and finely chopped |
dash of kosher salt and fresh ground pepper |
Directions:
1. Mix butter with hot sauce and Worcestershire until creamy and combined. 2. Add cheddar cheese, and mix completely. 3. Add flour, salt, pepper, cayenne, parsley and rice cereal and mix with dough hook on stand mixer, or by hand, as you do bread, until thoroughly combined. 4. Roll dough into about 1 1/2 inch balls and place on cookie sheet. 5. Press dough with fork tines in criss cross pattern, to flatten. 6. Bake at 350 for about 15 minutes until edges and bottoms are just starting to brown. 7. Let cool on cookie sheet 8. ***please note, this dough should be similar to sugar cookie dough, or even play dough...slightly tacky and thick, you'll need to roll them in your hands to get them to the ball stage...if the dough doesn't seem to fit this consistency, try adding a bit more cereal and/or refrigerate it. I don't recommend adding more flour, because they will taste too pasty, then. :) *** |
