Spicy Cheddar Cheese Spread |

This rich and spicy cheese mixture can be shaped into a ball or log or packed into a crock.Serve with assorted crackers,celery sticks, apple slices, and salami wrapped-breadsticks. From a November 1988 issue of Bon Appetit from a Cocktail Party menu. Ingredients:
8 ounces chilled sharp cheddar cheese, shredded |
8 ounces chilled monterey jack cheese, shredded |
1 medium onion, quartered and shredded |
1/2 cup unsalted butter, cut into pieces (1 stick) |
2 teaspoons hot pepper sauce (such as tabasco) |
Directions:
1. Combine all ingredients in large bowl; cover and let stand until cheeses soften, about 1 hour. 2. Using electric mixer, beat cheese mixture until fluffy, stopping occasionally to scrape down sides of bowl. 3. Spoon cheese into a crock. 4. (Can be prepared 3 days ahead. Cover and refrigerate. Bring to room temperature before serving.). |
