Spicy Cauliflower And Broccoli Salad |

This is a recipe from Phillip Lipetz. Ingredients:
2 1/2 c fresh cauliflower florets |
2 1/2 c fresh broccoli florets |
5 cups bibb lettuce, torn |
1 c red bell pepper, chopped |
1/4 c chicken or vegetable broth |
1/4 c water |
2 tbls lemon juice |
1 tbls olive oil |
1 garlic clove, minced |
1 1/2 tsp crushed red pepper |
salt and pepper to taste |
Directions:
1. Steam cauliflower and broccoli until crisp/tender ( about 5 - 10 minutes). 2. Transfer vegetables to a large bowl. 3. Add lettuce and red bell pepper. 4. Toss gently. 5. Combine the chicken broth, water, lemon juice, olive oil, garlic, crushed red pepper, salt and black pepper in a small jar. 6. Cover tightly, shake and blend well. 7. Pour over vegetable mixture. 8. Toss gently. 9. 74 calories per serving. 10. Serve immediately. |
