Spicy Catfish Fingers With Cucumber Coleslaw |

Ingredients:
1/4 cup crushed corn flakes cereal |
1 1/2 tablespoons yellow cornmeal |
2 1/2 teaspoons creole seasoning |
1 pound catfish fillets, cut crosswise into 12 strips |
cooking spray |
cucumber coleslaw |
Directions:
1. Combine first 3 ingredients in a shallow dish. Lightly coat catfish with cooking spray. Dredge catfish in cereal mixture. Place catfish in a jellyroll pan coated with cooking spray. Lightly coat catfish again with cooking spray. 2. Bake, uncovered, at 425° for 10 to 12 minutes or until fish flakes easily when tested with a fork. Serve with Cucumber Coleslaw. |
