Spicy Cashew Scallion Chicken |

Ingredients:
1 lb boneless skinless chicken breast, in 1 inch cubes |
salt and pepper |
1 tablespoon cornstarch |
2 tablespoons olive oil |
2 tablespoons minced garlic |
1/2 teaspoon crushed red pepper flakes |
2 tablespoons rice vinegar |
4 tablespoons hoisin sauce |
1/4 cup chicken stock |
10 scallions, cut in 1 inch pieces (green part) |
1/4 cup unsalted cashews |
Directions:
1. Season chicken with salt and pepper. Toss chicken with cornstarch in a bowl until chicken pieces arfe coated. 2. Heat 1 tbsp oil in a large nonstick skillet or wok. Cook half of the chicken until browned. Transfer to a plate and cook the other half of the chicken with the garlic and red pepper, adding more oil if needed. 3. Return first batch of chicken to skillet. Add the vinegar and cook until evaporated. Add the hoisin and chicken stock. Cook, tossing, until chicken is cooked through. Remove from heat and stir in scallions and cashews. |
