The unusual combination of vegetables in this healthy soup are brought together beautifully with the spices. Adapted from . Ingredients:
1 medium onion, quartered and sliced thin |
3 medium cloves garlic, chopped |
1 tsp minced jalapeno pepper |
2 tsp cumin |
1 tbsp dry mustard |
5 cups + 1 tbsp vegetable broth |
2 tbsp fresh lemon juice |
2 medium sized red potatoes cut in 1/2 inch cubes, about two cups |
1 15oz can diced tomatoes |
3 cups thinly sliced savoy cabbage |
black pepper to taste |
Directions:
1. Heat 1 tbsp of broth in a medium soup pot. 2. Add onion and sauté for about 5 minutes. Stir in garlic and jalapeno. Continue to sauté for another minute. 3. Stir in cumin and mustard, and add broth and rest of ingredients except cabbage, salt and pepper. 4. Simmer for about 30 minutes, uncovered. 5. Add cabbage, and cook for another 5 minutes. 6. Season with salt and pepper to taste. |
