2 tablespoons vegetable oil |
1 onion, chopped |
2 garlic cloves, minced |
2 jalapeno peppers, seeded and chopped |
1 bell pepper, chopped |
1/2 teaspoon ground cumin |
1/2 teaspoon ground coriander |
1/2 teaspoon ground turmeric |
1/2 teaspoon salt |
2 medium tomatoes, coarsely chopped |
1 small green cabbage, thinly sliced |
1 tablespoon vinegar |
Directions:
1. Heat oil in 12-inch skillet until hot. Cook and stir onion, garlic, jalape?o peppers, green pepper, cumin, coriander, turmeric and salt over medium heat until onion is tender, about 5 minutes. 2. Stir in tomatoes and cabbage. Heat to boiling; reduce heat. Cover and simmer until cabbage is tender, about 12 minutes. Stir in vinegar. |
