Spicy Butternut Squash with Bacon and Lime |

Can be prepared in 45 minutes or less. Ingredients:
1 small butternut squash, peeled, seeded, and cut into 1/2-inch cubes |
3 slices bacon |
2 teaspoons fresh lime juice |
1/2 teaspoon tabasco, or to taste |
Directions:
1. Steam squash on a streamer rack set over boiling water, covered, until tender, about 5 to 8 minutes. 2. In a skillet cook bacon over moderate heat until crisp, reserving 2 teaspoons bacon fat. 3. Crumble bacon into a bowl and toss with squash, juice, Tabasco, reserved bacon fat, and salt and pepper to taste. |
